Coconut pancakes

wisk together:
3/4 c flour
2 tsp baking powder
1/4 c shreaded coconut (I use unsweetened but you can use the regular kind)
1/2 tsp cardamom which is too rich for my blood so I use a combo of cinnamon and nutmeg
in a blender:
1/4 c coconut milk
3/4 cup soy milk
1 banana
Pour the banana/milk mixture into the dry stuff. Stir gently until just mixed. Pour batter onto a hot non stick pan or a lightly oiled frying pan and cover. Let it sit on med heat until the center starts to bubble and becomes sturdy. Flip and cook other side until golden brown. It makes 2 large or four smaller pancakes.

Reuben Casserole

MMM Yummy, good for a potluck too, if you like Reubens you will love this!
1 loaf rye bread (cut into cubes)
1 (16 ounce) can sauerkraut
1 1/2 cups swiss cheese, shredded
1 cup sour cream
1/2 cup thousand island dressing
2 cups corned beef, cut into small pieces
1/2 cup butter

Put half of the rye bread cubes into a greased sheet cake pan.
Top with the sauerkraut.
Mix the sour cream and thousand island dressing together and spoon half on top the sauerkraut. Top with 1 cup of the swiss cheese.
Top with the corned beef.
Top with the rest of the sour cream/dressing mix.
Lastly, top with the remainder of the bread cubes and the remainder of the swiss cheese.
Drizzle the melted butter over all.
Cover with foil and bake at 350 degrees for 30 minutes.
Uncover and bake an additional 10 minutes.
Serve hot.

Guinness Cake

From the Kelly Hogaboom blog:
1 cup Guinness stout
10 tablespoons unsalted butter
3/8 cup unsweetened cocoa
2 cups superfine sugar (also known as Baker's or caster sugar)
3/8 cup sour cream
2 large eggs
1 tablespoon vanilla extract
2 cups all purpose flour
2 1/2 teaspoons baking soda
For the icing:
1 1/4 cups confectioners' sugar
8 ounces cream cheese (room temperature)1/2 cup heavy cream
Heat oven to 350. Butter a 9-inch high-walled pan* and line with parchment paper. In a large saucepan, combine Guinness and butter. Place over medium-low heat until butter melts, then remove from heat. Add cocoa and superfine sugar, and whisk to blend.In a small bowl, combine sour cream, eggs and vanilla; mix well. Add to Guinness mixture. Add flour and baking soda and whisk again until smooth. Pour into buttered pan and bake until risen and firm, 45 minutes to one hour (again, don't overbake!). Place pan on a wire rack and cool completely in pan.For the icing: using a food processor or by hand, mix confectioners sugar to break up lumps. Add cream cheese and blend until smooth. Add heavy cream, and mix until smooth and spreadable. The icing will be slightly loose.Remove cake from pan and place on a platter or cake stand. Ice top of cake only, so that it resembles a frothy pint of Guinness.Yield: one giant-ass muthafuckin' cake.

Black bean soup

1store bought rotisserie chicken/3 cooked chicken breasts shredded/leftover turkey
4 cans black beans
2 cans diced tomatoes with green chilis
2 cans chicken stock
1 brick cream cheese (room temp)
1/2 cup milk
1 tblsp cumin
1 tblsp chili powder
1 tsp black pepper
1 medium onion minced
2 cloves garlic minced
1 dash of cinnamon
olive oil
Mince onion and garlic. Heat skillet to med. add olive oil, then onions and garlic, cook to soften. Shred chicken and put into soup pot. Add onions and garlic. Empty one can of beans into a bowl and smash. Add to pot, add remaining canned ingredients including juices. Add cream cheese, break apart as much as possible.(It will continue to break down as the soup cooks.)Add the rest of the ingredients. Bring to a boil and then reduce heat and simmer on stove for 1-2 hours. Adjust seasonings to your taste, but do not add salt, this is a salty dish all on its own. Serve with broken corn chips sprinkled over and shredded cheddar cheese, and sour cream for those who think its too hot!
This recipe is my standard dish to bring to new mothers, complete with corn muffins.
Always a big hit with men.
Serves many and freezes well.

One-pot cabbage stew

This is soo good! I developed this recipe from one I got from woman I met in Florida. She was raised in PA.

2 Bags preshredded coleslaw mix ( I prefer the mix with purple cabbage in it, but use what is avail)
2 160z cans sauerkraut
1 med.minced onion
1 package onion soup mix
1lb raw ground pork or cube up 2-3 raw boneless pork chops
1 lb/package smoked beef sausage (can use polska keilbasa) cut into slices
1/2 stick butter
2tbls olive oil
1tbls pepper
dash of salt
1/4 cup water

Combine all ingredients in crock pot, be sure to stir through. If there is not enough room for all the cabbage, wait an hour or two, then add more. ( it will shrink as it cooks)
Cook 6-8 hours. Serve over hot mashed potatoes, or noodles. Serves many!

Steak: It's really what's for dinner

Steak is only as good as the cut of meat! treat yourself by buying a good cut. Delmonico or rib-eye makes a great pan fried steak. At least 3/4 lb per person is good too!
you will need the following ingredients:
Steak enough for the amount of persons you are feeding.
2Tbls butter
olive oil
garlic powder
onion powder
salt and pepper
dried parsley
paprika
Italian salad dressing
worchester sauce
soy sauce


Season meat in the following order: Light salt, pepper, garlic and onion powders, paprika, and lastly dried parsley. Pound slightly on both sides after seaoning side. Use fine pound side not flat! Place meat into gallon sized baggie and add the following: 1/2 cup italian dressing, 1 Tbsp each worcester sauce and soy sauce, 1/8 C olive oil. Let marinate at least 1/2 hour, but not more than an hour. Heat pan to med-high, melt butter and drizzle in olive oil. Place meat in pan just before butter starts to brown. Let cook for at least 2-3 min. before turning over you want to get good carmalization to seal in flavor and juice! Cook remaining time til desired doneness. I personally like a good med. rare, but know many do not! Serve with baked potatoes and steamed veggies. enjoy

Tater tot casserole

1-2lbs ground beef/turkey/boca crumbles
1 medium finely diced onion
1 bag frozen french style green beans
1 bag tatertots
1 can golden mushroom/cream or mushroom soup
1 can milk
1 16oz package cheddar cheese

cook hamburg and onions in frying pan until meat is no longer pink, and onions are soft. put into greased casserole dish, layer on green beans. Mix milk and soup together, pour ove green beans. Put tots on, then sprinkle cheese over. Bake 350 for 35-45min till tots are cooked. serves 4 hungry persons
