Coconut pancakes

wisk together:
3/4 c flour
2 tsp baking powder
1/4 c shreaded coconut (I use unsweetened but you can use the regular kind)
1/2 tsp cardamom which is too rich for my blood so I use a combo of cinnamon and nutmeg
in a blender:
1/4 c coconut milk
3/4 cup soy milk
1 banana
Pour the banana/milk mixture into the dry stuff. Stir gently until just mixed. Pour batter onto a hot non stick pan or a lightly oiled frying pan and cover. Let it sit on med heat until the center starts to bubble and becomes sturdy. Flip and cook other side until golden brown. It makes 2 large or four smaller pancakes.
