Black bean soup

1store bought rotisserie chicken/3 cooked chicken breasts shredded/leftover turkey
4 cans black beans
2 cans diced tomatoes with green chilis
2 cans chicken stock
1 brick cream cheese (room temp)
1/2 cup milk
1 tblsp cumin
1 tblsp chili powder
1 tsp black pepper
1 medium onion minced
2 cloves garlic minced
1 dash of cinnamon
olive oil
Mince onion and garlic. Heat skillet to med. add olive oil, then onions and garlic, cook to soften. Shred chicken and put into soup pot. Add onions and garlic. Empty one can of beans into a bowl and smash. Add to pot, add remaining canned ingredients including juices. Add cream cheese, break apart as much as possible.(It will continue to break down as the soup cooks.)Add the rest of the ingredients. Bring to a boil and then reduce heat and simmer on stove for 1-2 hours. Adjust seasonings to your taste, but do not add salt, this is a salty dish all on its own. Serve with broken corn chips sprinkled over and shredded cheddar cheese, and sour cream for those who think its too hot!
This recipe is my standard dish to bring to new mothers, complete with corn muffins.
Always a big hit with men.
Serves many and freezes well.
