Burritos Supremeos
Well fall is here, and for some reason, I always crave Mexican food this time of year. For some reason, maybe because we are not closer to Boston, there is not much in the way of food diversity here. As my luck would have it, this includes Mexican food. So alas, I am left to my own devices.
Back home (Kansas) there is a late night dive, called Burrito King, it is a small drive-thru joint with the cheapest food in town. They are known for these mammoth burritos, and this is my version of them.
Burritos Supremeos
1 package spanish rice mix ( I can find brown rices ones here)
1 can refried beans
shredded cheese
some sort of meat your choice (tonite I used leftover pork)
fresh diced tomatoes
lettuce
salsa
sour cream
any other ingredient you want to add( get creative!)
Largest size tortillas you can buy
Make rice according to package directions. Heat beans, and meat. Or go vegetarian.
Diced toms, and lettuce.
Heat tortillas in microwave, just a few seconds each, otherwise they will tear when you assemble.
Put together in this order: thin layer of beans, layer of rice, meat, or no meat, cheese, veggies, light layer of sour cream and salsa.
Roll one edge up about inch and a half, fold in sides and roll so that one end is open.
I wrap mine in a piece of foil so they don't fall apart.
